Brown Butter Icing

    Butter must be used, not margarine, in making this icing. The butter is cooked and caramelised in creating the flavour base for this cake icing.

    Ingredients
    Serves: 10 

    • 125g butter
    • 4 cups (620g) icing sugar
    • 4 tablespoons milk
    • 1 teaspoon vanilla essence

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Place the butter in a saucepan over medium-high heat. Cook stirring constantly until the butter is a nice tan colour. If it gets dark brown or black you have allowed it to burn too long. When butter has been "burned" remove the saucepan from the heat.
    2. Slowly mix in icing sugar and vanilla. Beat on high speed of an electric mixer until light and fluffy.
    3. Beat in the milk a tablespoon at a time until desired spreading consistency is achieved.
    4. Use icing immediately as this icing will set up quickly.

    SO GREAT! My Sister in law made cookies recently frosted with a similar recipe and only stated it wa "Brown butter frosting." This was exactly it! I used it to frost butterscotch cookies---fabulous!  -  04 Aug 2007  (Review from Allrecipes USA and Canada)

    I was glad to find this recipe, as I had accidently burnt some butter and didn't know what to do with it. I made Blonde Brownies from this site and frosted them with this.     What more can I say than "wow". It had a very interesting flavor, for sure, and although nobody really seemed to "love" it, every drop of the icing was licked out of the bowl and eaten off of the cake! Addicting!  -  08 Apr 2001  (Review from Allrecipes USA and Canada)
