    Bruschetta is a good, fresh starter or light meal. This recipe has fresh fragrant herbs and garlic. Serve on crusty bread.

    Serves: 4 

    • 3 large tomatoes, seeded and chopped
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons chopped fresh chives
    • 2 cloves garlic, minced
    • 4 tablespoons minced fresh basil
    • 1/3 cup (80ml) extra virgin olive oil
    • salt and pepper to taste

    1. In a medium bowl combine tomatoes, parsley, chives, garlic, basil, olive oil, salt and pepper. Cover and refrigerate for at least 1 hour, allowing flavours to meld before serving.
