Homemade Soup Noodles

    Homemade noodles are so simple to make and require only 4 ingredients: flour, salt, baking powder and egg yolk. You can cut your noodles any size you fancy.

    Serves: 4 

    • 280g plain flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
    • 4 egg yolks

    Preparation:20min  ›  Ready in:20min 

    1. Sift together the flour, salt and baking powder. Add egg yolks and mix until dry ingredients are moistened.
    2. Press into a ball and cut in quarters. Roll out on floured surface; cut to desired width and length. Lay on linen cloth or wooden surface to dry.
    3. Add to stock such as chicken or turkey and cook until done.

    Took shortcuts. Like the other reviewers, I also had to add some water to this recipe to get the dough to bind. I used my bread machine to mix the dough. Put the ingredients in the machine, selected "dough" setting, and let the machine mix it for 10 minutes, then removed the dough. It was perfect and easy to roll out. Noodles turned out delicious in our chicken soup!  -  08 Oct 2008

    First time I've ever made noodles and they were great! Used the leftover roast duck to make a big pot of soup -- tasty, but it wasn't very hearty until we added these. No mixer, so I did it by hand. Perhaps that's why I had to add milk to get it all to bind. It didn't look too promising, but it rolled out OK. Rested it about 20 minutes then cut and air dried noodles for a few hours. Cooked them in the stock at a really low boil and they were tender but with substance to them. This can't be beat for soups!  -  08 Oct 2008
