Followed the recipe, pulled it out of the oven and when I tried to cut into it, I found it was complete mush, making our spiral cut Christmas ham a mess. There were a few edible parts right next to the bone and the pineapple was delicious, but everything else was all mush. Turns out fresh pineapple has the proteolytic enzyme Bromelain, which when it's heated digests protein, in this case, the ham. The result was similar to a ham slushy.
I'm glad we didn't have company over for Christmas or else I would have been completely abashed.
