Crumbed Spam

    I have a deep fryer that doesn't get much use so was looking for something to cook apart from chips when I found this. Now I have a back-up meat always available in the cupboard. Serve on burgers or with a salad.

    Makes: 4 

    • 1 litre vegetable oil for frying
    • 1 (375g) tin Spam, cut into 6mm slices
    • 1 cup (125g) plain flour
    • 2 eggs, whisked
    • 2 cups breadcrumbs
    • 1 tablespoon Italian herb mix

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Heat oil in a deep fryer or large saucepan to 180 degrees C.
    2. Gently press the luncheon meat slices into the flour to coat and shake off the excess flour.
    3. Dip into the whisked egg then press into the breadcrumbs combined with the Italian herb mix. Gently toss between your hands so any breadcrumbs that haven't stuck can fall away.
    4. Place the crumbed Spam onto a plate while cooking the rest; do not stack.
    5. Deep fry the Spam a few slices at a time until hot and golden brown; 3 to 5 minutes. Drain on a paper towel lined plate before serving.

    This is almost exactly the recipe I've used for years. The only difference is I substitute 1 cup of the bread crumbs with 1 cup of grated parmesan cheese in the breading.
