    Savoury and spicy chorizo made with pork, garlic, vinegar and dried chillies. This is a cheat's chorizo, as there's no need for sausage casings. I just think everything tastes better when it's homemade - try it and see!

    Ingredients
    Serves: 8 

    • 1 clove garlic
    • 3 teaspoons dried oregano
    • 100ml distilled cider vinegar
    • 8 tablespoons dried crushed chillies
    • 100ml water
    • 1.25kg pork mince

    Directions

    1. In a blender, combine garlic, oregano, vinegar, crushed chillies and water. Blend until smooth.
    2. Place minced pork in a bowl and cover with the marinade; cover bowl and refrigerate 8 hours or all day. Refrigerate or freeze for future use.

    Tip:

    Think of this as a homemade alternative to fresh chorizo. You can use the mince to flavour everyday dishes like pasta sauces, omelettes and pizza.

    Chorizo is good when used as a breakfast meal. Scramble eggs, add some beans, and then some chorizo. Cook together in a large frying pan and serve with flour or corn tortillas. (I can't give exact measurements because I just add to my family's liking) Play around with it. - 29 Sep 2008

    Make this, then freeze this in 250g portions and incorporate it when you make tacos or burritos or enchiladas. When I finished cooking it is when I added a little salt. - 29 Sep 2008
