This makes enough delicious stew to feed an army. Lamb shanks seared and cooked with potatoes, carrots and onion.

Serves: 7 

  • 7 (500g) lamb shanks
  • 2 tablespoons vegetable oil
  • water to cover
  • 750g potatoes, peeled and diced
  • 750g carrots, peeled and diced
  • 750g onions, peeled and diced
  • 30g plain flour
  • 60g butter, melted
  • salt and pepper to taste

  1. Heat oil in a large saucepan over medium high heat. Brown shanks in oil, about 20 minutes. Add water to cover, reduce heat to low and simmer for about 1 hour.
  2. Add potatoes, carrots and onions and simmer for about 1 hour. In a small bowl blend flour into melted butter to make a roux, then stir this into simmering dish to thicken. Season to taste.
