Boiled Sultana Cake

    This is an easy and wonderfully tasty sultana cake. Initially the sultanas are boiled which creates a nice soft fruit that some other versions of sultana cakes don't have.

    Serves: 12 

    • 2 cups sultanas
    • 2 cups (500ml) water
    • 1/2 cup (125ml) vegetable oil
    • 1 cup (250ml) cold water
    • 2 cups (440g) white sugar
    • 4 cups (500g) plain flour
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground cloves
    • 1 teaspoon ground nutmeg
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt

    1. Boil sultanas in water for 15 minutes. Remove from heat.
    2. Add vegetable oil and cold water to the sultanas.
    3. Mix sugar, flour, spices, bicarbonate of soda and salt in a large bowl.
    4. Add the sultana mixture and stir until just mixed.
    5. Pour into a greased and floured 22x32cm cake tin and bake for one hour in a preheated 180 degrees C oven. It is done if a toothpick comes out clean.

    Very yummy cake. I was short on sultanas and had frozen cranberries I had no idea how to use. I replaced half of the sultanas with frozen cranberries. Absolutely delicious!!!  -  03 Jan 2017
