Budget Macaroni and Cheese with Bacon

    This is a good budget meal, ideal for lunch or a snack. You could also serve it with a green salad or steamed vegetables.

    Serves: 6 

    • 400g dry macaroni and cheese
    • 1 green capsicum, chopped
    • 1 onion, chopped
    • 1 large tomato, chopped
    • 450g bacon, cooked and crumbled

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Prepare macaroni and cheese according to packet directions.
    2. Meanwhile, in a large bowl mix together the chopped green capsicum, onion, tomato and crumbled bacon.
    3. Mix in prepared macaroni and cheese to large bowl with vegetables and bacon. Stir to incorporate ingredients evenly. Pour into a 20x30cm baking dish.
    4. Bake in a preheated 180 degree C oven for 45 to 60 minutes or until crispy on top. Serve warm.

    Didn't everyone's Mom make this for their children at some point during their childhood? It may not be high-class cooking but it's pure comfort food at it's simplest. I suggest you saute the bell pepper and onion with a little garlic in a bit of the bacon grease and toss that with the cooked macaroni and cheese before adding the milk and butter.     We thought this was really GREAT! I made as written with the exception of cooking the onions and green pepper slightly before adding to the rest of the ingredients. Don't get me wrong, I enjoy making my homemade mac and cheese, but we also are fans of 'the blue box', and this was a great way to dress it up! I think next time I may add either some shredded cheddar or buttered breadcrumbs to the top before baking, just because. This will definately be made again!     Although the ingredients list is short, this dish was not as simple as I thought it would be. But it is tasty! I sauteed the bell pepper and onion in the bacon grease before adding to the macaroni and added italian bread crumbs to the top.
