    These are great snack bars made with fresh blueberries. They taste like blueberry cheesecake but have a different consistency.

    Serves: 12 

    • Crust
    • 100g butter
    • 3/4 cup (185g) white sugar
    • 1 egg
    • 1/3 cup (85ml) milk
    • 3/4 teaspoon almond essence
    • 1 cup (125g) plain flour
    • 1 1/4 teaspoons baking powder
    • 1 1/2 cups fresh blueberries
    • Topping
    • 2 eggs
    • 85g cream cheese, softened
    • 1/3 cup (60g) icing sugar
    • 1 teaspoon almond essence

    1. Preheat oven to 180 degrees C. Grease a 20cm square baking dish.
    2. Crust: In a large bowl cream butter and sugar then add one egg, milk and almond essence. Mix in flour and baking powder, stirring constantly. Spread crust evenly in baking dish. Top with blueberries.
    3. Topping: In a medium bowl beat two eggs and cream cheese until smooth. Stir in icing sugar and almond essence. Spread over blueberries.
    4. Bake 55 to 60 minutes, or until firm to the touch. Cool in dish before cutting into bars.
