    These are great snack bars made with fresh blueberries. They taste like blueberry cheesecake but have a different consistency.

    Ingredients
    Serves: 12 

    • Crust
    • 100g butter
    • 3/4 cup (185g) white sugar
    • 1 egg
    • 1/3 cup (85ml) milk
    • 3/4 teaspoon almond essence
    • 1 cup (125g) plain flour
    • 1 1/4 teaspoons baking powder
    • 1 1/2 cups fresh blueberries
    • Topping
    • 2 eggs
    • 85g cream cheese, softened
    • 1/3 cup (60g) icing sugar
    • 1 teaspoon almond essence

    Directions
    Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

    1. Preheat oven to 180 degrees C. Grease a 20cm square baking dish.
    2. Crust: In a large bowl cream butter and sugar then add one egg, milk and almond essence. Mix in flour and baking powder, stirring constantly. Spread crust evenly in baking dish. Top with blueberries.
    3. Topping: In a medium bowl beat two eggs and cream cheese until smooth. Stir in icing sugar and almond essence. Spread over blueberries.
    4. Bake 55 to 60 minutes, or until firm to the touch. Cool in dish before cutting into bars.

    I used butter instead of shortning, and I increased the cream cheese to 1 cup. I also added a crumb toping of: 1/2 cup sliced almonds 1 cup flour 3/4 cup oats 1/4 cup brown sugar 1 tsp nutmeg 1 tsp cinnamon 1/2 cup marg 2 tblsp whipping cream and just used my fingers to mix it till crumbly and sprinkled it over the top.     I tweaked this recipe a bit...I used 8oz of 1/3 less fat cream cheese, a pint of blueberries and vanilla instead of almond. More cheesecake like on top, cake-like on the bottom, like a pastry.  -  11 Jul 2004  (Review from Allrecipes USA and Canada)
