Crispy Crunchy Chocolate Chip Biscuits

    Not your average chocolate chip biscuits! These have rice bubbles added to provide an extra lightness and crunch. They'll go fast!

    Serves: 60 

    • 1 cup (250g) white sugar
    • 1/2 cup (90g) packed brown sugar
    • 1 cup copha
    • 2 teaspoons vanilla essence
    • 2 eggs
    • 2 1/2 cups (300g) plain flour
    • 1/2 cup wheatgerm
    • 1 teaspoon salt
    • 1 teaspoon bicarb soda
    • 1 cup rice bubbles
    • 1 1/2 cups dark chocolate chips

    1. Preheat oven to 190C.
    2. Cream together white sugar, brown sugar and copha until fluffy. Stir in the vanilla and eggs. Combine the flour, wheatgerm, salt and bicarb soda; mix into the batter. Stir in rice bubbles and chocolate chips. Drop by teaspoonfuls on an ungreased baking tray, spacing biscuits 5cm apart.
    3. Bake for 11 to 13 minutes in the preheated oven until biscuits are light brown at the edges.

    These cookies are fabulous! I have to hand out copies of the recipe every time I bring these cookies someplace. They are crunchy; I've tried shortening the cooking time a little in hopes of getting softer cookies but haven't yet succeeded. I use my stand mixer for this recipe and would recommend this over hand-mixing. The batter is quite heavy. However, it would be possible to mix it by hand, just a little more elbow grease involved.
