Easy Blackberry Cake

    This is a beautiful treat to make in the summer after berry picking, or in the winter using frozen blackberries. Just as good for breakfast as dessert.

    Serves: 16 

    • 3 tablespoons butter
    • 1 cup (250g) white sugar
    • 1 egg
    • 1 1/2 cups (190g) sifted plain flour
    • 1/2 teaspoon salt
    • 1 teaspoon bicarb soda
    • 1/2 tablespoon ground cinnamon
    • 1 pinch ground nutmeg
    • 2 tablespoons white vinegar
    • 1/3 cup apple juice
    • 1 1/4 cups fresh blackberries

    1. Preheat oven to 170C. Lightly grease one 20x20cm baking tray.
    2. In large bowl beat the butter and sugar together until light and fluffy. Add the egg and beat well.
    3. Combine the flour, salt, bicarb soda, cinnamon and nutmeg. Add the flour mixture to the sugar mixture and stir to combine. Mix in the vinegar and juice. Fold in the blackberries.
    4. Pour batter into the prepared pan and bake for 35 to 40 minutes. Let cool in pan and cut into squares.
