These are a delicious high fibre snack and very easy to make. You can easily substitute different kinds of nuts and seeds. If you don't have enough of one thing, just add more of another.
3/4 cup peanut butter
3/4 cup (125g) brown sugar
3/4 cup honey
1 teaspoon vanilla essence
1/2 cup (60g) unsweetened cocoa powder
2 cups rice bubbles
1 1/2 cups (220g) rolled oats
1 cup shredded coconut
3/4 cup sesame seeds
3/4 cup sunflower seeds

In a large bowl, combine the cocoa powder, rice bubbles, oats, coconut and sesame seeds. Set aside.
In a saucepan over medium heat stir together the peanut butter, brown sugar, honey and vanilla. Cook and stir until melted. Pour over the dry mixture and stir to coat evenly. Press lightly into a buttered 20x30cm baking dish. Cool for about 1 hour to firm up, then cut into squares.
