Easy Creamy Pasta Salad

    This will be a favourite recipe to bring to picnics and barbecues. You can adjust the amount of dill to your own taste, or add a little parmesan cheese.

    Serves: 10 

    • 500g penne pasta
    • 2 large cucumbers, peeled and cubed
    • 2 roma tomatoes, chopped
    • 2 cups mayonnaise
    • 250g sour cream
    • 3 tablespoons dried dill
    • 2 tablespoons lemon pepper

    Preparation:20min  ›  Cook:10min  ›  Extra time:45min chilling  ›  Ready in:1hour15min 

    1. Bring a large pot of lightly salted water to a boil. Add penne pasta and cook for 8 to 10 minutes or until al dente; drain.
    2. Combine pasta, cucumbers, tomatoes, mayonnaise, sour cream, dill and lemon pepper. Serve as is or chill for 45 minutes.

    I cut the dressing down to 1 cup mayo and 1 cup sour cream, 2 tbsp dill and 1 tbsp lemon pepper. I thought the 3 cups made too much dressing for a pound of pasta.  -  04 Jul 2002  (Review from Allrecipes USA and Canada)


    This has become "my" pasta salad recipe that I take to picnics and barbecues. It's nice and creamy, although I think it calls for a little too much dill. I half the dill, and the salad still has a good taste, but it's not overpowering.
