Lovely and Chewy Chocolate Biscuits

These biscuits are delightfully decadent and very easy to make. You may find that they take even less time to cook, depending on your oven.

Serves: 24 

  • 125g butter, softened
  • 1/3 cup chocolate topping
  • 1 cup (185g) packed brown sugar
  • 1/2 cup (125g) white sugar
  • 2 eggs
  • 2 tablespoons golden syrup
  • 2 teaspoons vanilla essence
  • 2 1/2 cups (300g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 350g chocolate bits

  1. Preheat the oven to 190 degrees C.
  2. In a medium bowl, cream together the butter, chocolate topping, brown sugar and white sugar until smooth. Beat in the eggs, one at a time, then stir in the golden syrup and vanilla. Combine the flour, bicarb soda and salt; stir into the creamed mixture until just blended. Mix in the chocolate bits by hand. Drop biscuits by 1/4 cupfuls onto ungreased baking trays.
  3. Bake for 12 to 14 minutes in the preheated oven. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
