    If you're a fan of chocolate cake, you must try this recipe. This moist and flavourful cake is make especially decadent through the addition of chocolate fudge icing.

    Serves: 18 

    • 125g butter
    • 1/2 cup copha
    • 1 cup (250ml) water
    • 1/4 cup unsweetened cocoa powder
    • 2 cups (250g) plain flour
    • 2 cups (500g) white sugar
    • 1/2 cup (125ml) milk
    • 1 tablespoon distilled white vinegar
    • 2 eggs
    • 1 teaspoon bicarb soda
    • 1 teaspoon vanilla essence
    • Fudge Icing
    • 6 tablespoons butter
    • 4 tablespoons milk
    • 3 tablespoons unsweetened cocoa powder
    • 3 cups (500g) sifted icing sugar
    • 1 teaspoon vanilla essence

    1. Bring to a boil the 125g butter, 1/2 cup copha, water and 1/4 cup cocoa. Remove from heat and add flour, sugar, 1/2 cup (125ml) milk and vinegar. Mix well, then add eggs, bicarb soda and 1 teaspoon vanilla.
    2. Mix well until lumps are gone. Pour into greased 20x30cm pan. Bake at 200C for 20 minutes or until toothpick comes out clean.
    3. To make the icing: combine in saucepan 6 tablespoon butter, 4 tablespoons milk and cocoa. Bring to rolling boil. Remove from heat and add 3 cups icing sugar and 1 teaspoon vanilla. Beat until smooth. Spread on cooled cake.

    Have an idea for a different icing. It may sound weird but believe me it´s delicious. Just melt 200 g of dark chocolate and mix it with the same amount of sour cream. That icing is soft and very tasty! - 24 May 2012
