This is a super easy meal that I use on busy days. You can vary by adding more or less cream and change the type of pasta used.

    Serves: 4

    • 375ml rotini or spiral pasta
    • 2 tablespoons butter or margarine
    • 500g skinless, boneless chicken breast halves, cut into 1cm cubes
    • 3 cloves garlic, crushed
    • 1/2 teaspoon ground black pepper
    • 2 teaspoons dried basil
    • 1 cup (250ml) thickened cream
    • 1/4 cup grated Parmesan cheese

    1. In a large saucepan boil some salted water and cook pasta until al dente. Drain.
    2. Meanwhile in a large frypan melt the butter. Add the diced chicken and garlic then saute until lightly brown and juices run clear.
    3. Stir in the ground black pepper, dried basil, cream and grated Parmesan cheese. Bring to a boil and simmer for 3 to 4 minutes.
    4. Toss drained pasta with basil sauce and serve immediately.
