    A simple way to start the day with these breakfast bars that contain banana, oats and wheat germ. Great for those mornings when you need to eat on the go.

    Serves: 16 

    • 1/3 cup peanut butter
    • 1/3 cup (60g) brown sugar
    • 2 1/2 tablespoons butter
    • 1 egg
    • 1/2 teaspoon vanilla essence
    • 1 ripe banana, mashed
    • 2/3 cup rolled oats
    • 1/3 cup (50g) plain flour
    • 2 tablespoons wheat germ
    • 1/4 teaspoon bicarbonate of soda

    1. Preheat oven to 180 degrees C. Grease a 22x22cm cake tin.
    2. In a mixing bowl beat together the peanut butter, brown sugar and butter with an electric mixer until smooth and fluffy.
    3. Beat in the egg and vanilla essence then the banana.
    4. Stir in the oats, flour, wheat germ and bicarbonate of soda until completely combined. Spread in prepared cake tin.
    5. Bake in the preheated oven until set and lightly browned; 20 to 25 minutes.
    6. Remove from oven and cool in the tin on a cake rack before cutting into bars.
