Quick and Easy Banana Loaf

    This delicious banana loaf is a simple and filling snack. Make sure you use overripe bananas so that it is nice and sweet. You could also add walnuts to this recipe.

    Serves: 12 

    • 3 very ripe bananas
    • 1 1/2 cups (185g) plain flour
    • 1 cup (220g) white sugar
    • 65g butter, softened
    • 1 teaspoon vanilla essence
    • 1/2 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1 egg

    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Preheat oven to 180 degrees C. Grease and flour a 12x20cm loaf tin.
    2. Mash bananas and add flour, sugar, butter, vanilla, baking powder, bicarb soda and egg. Mix well. Pour into loaf tin.
    3. Bake for 50 to 60 minutes, or until toothpick inserted into centre of cake comes out clean.

    Sooo easy, I had five small bananas and the rest of the ingredients were in the cupboard...1 hour later, and I had fresh banana loaf. My Mum and Dad (in their 80's) and my grandson (8) LOVED it!!  -  05 Dec 2013
