Raisin Sheet Cake

    This is an easy to make sheet cake that I like as it is easier to cut smaller servings. I normally eat as is but you can add an icing if desired.

    Serves: 12 

    • 1 1/2 cups (185g) plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 2/3 cup (165ml) hot water
    • 1 cup raisins
    • 1/2 teaspoon instant coffee
    • 1 teaspoon ground cinnamon
    • 1/2 cup margarine
    • 1 cup (220g) white sugar
    • 2 eggs

    1. Preheat oven to 180 degrees C. Grease and flour a 25x35cm baking tray.
    2. Sift together the flour, baking powder and bicarbonate of soda. Set aside.
    3. Pour hot water over raisins. Stir in instant coffee and cinnamon. Set aside to cool.
    4. In a large bowl cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture. Finally stir in the raisin mixture.
    5. Spread batter on prepared baking tray. Bake in the preheated oven for 20 minutes or until a toothpick inserted into the centre of the cake comes out clean.

    We love raisins and coffee and wanted to give this a try. Cake was very good but cooked thinner than expected. Frosted with Cinnamon Coffee Frosting also from this sight. Very Good!  -  31 Jul 2007  (Review from Allrecipes USA and Canada)


    I made it with applesauce instead of butter, which I think made it very dense. The flavours were nice, but the raisins sank to the bottom.
