Green Goddess dressing was the most popular dressing in America before ranch dressing came along. Give it a try!

VERDIEIIIS

Ingredients
Serves: 12 

  • 3 tablespoons tarragon vinegar
  • 3 tablespoons white wine vinegar
  • 2 bunches spring onions, chopped, including some green tops
  • 1 bunch fresh parsley, rinsed well and stalks removed
  • 100g anchovy fillets
  • 2 cloves garlic
  • 1 teaspoon salt
  • juice of 1 lemon
  • 2 cups mayonnaise

Directions

  1. Purée vinegars, onions, parsley, anchovies, garlic, salt and lemon juice in a blender until well combined. Blend in mayonnaise and serve over a crisp green salad.
