    Although bagels are regarded as difficult to make I find them not too bad even though there are a two steps to be considered, 1/ boiled 2/ baked.

    Serves: 12 

    • 4 1/2 cups (550g) plain flour
    • 3 tablespoons white sugar
    • 1 1/2 teaspoons salt
    • 1 (7g) packet active dry yeast
    • 1 2/3 cups (415ml) warm water
    • 2 tablespoons butter
    • 1 tablespoon white sugar
    • 2 teaspoons salt

    1. Mix together the unsifted flour, sugar, salt, yeast, water and butter in the bread machine on the manual setting.
    2. Remove from bread machine.
    3. Divide dough into 12 pieces then shape into smooth balls. Poke a 2cm hole in each.
    4. Drop bagels into a large frypan with 2cm of simmering water with the sugar and salt in the water.
    5. Cook on medium low heat for 3 minutes then turn and cook 2 minutes; turn again and cook 1 minute more. Drain on towels. Repeat for rest of dough. Place on greased baking tray.
    6. Bake at 190 degrees C for 20-25 minutes.
    7. Remove from baking tray and cool. If desired before baking mix 1 egg white and 1 tablespoon water, brush on bagels and sprinkle with sesame, poppy or caraway seeds.

    Used different ingredients. used brown sugar instead of white in the dough and 1 tbsp golden syrup in the boiling liquid in place of the sugar and salt - 25 Feb 2011
