This sweet and sour salad is colourful and delicious and is a refreshing addition to a summer meal.


Serves: 8 

  • 4 (400g) tins baby beetroot - drained, rinsed and quartered
  • 3 (310g) tins mandarins, drained
  • 1 large red onion, cut into chunks
  • 2 cups (500ml) apple cider vinegar
  • 2 cups (500ml) orange juice

  1. Stir the beetroot, mandarins, onion, vinegar and orange juice together in a bowl; serve immediately or chill until needed.
