This is a beautiful creamy crab soup that uses a combination of simple ingredients to create a soup that is easy to make and a joy to eat.

Serves: 4 

  • 125g butter
  • 1/3 cup (50g) flour
  • 1 teaspoon Italian mixed herbs
  • 1 tablespoon Worcestershire sauce
  • 1 (400g) tin chicken stock
  • 1 cup (250ml) dry white wine
  • 1 cup (250ml) cream
  • 1 tablespoon gravy mix
  • 150g crabmeat
  • 4 drops chilli sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

  1. Melt butter in a large saucepan over low heat. Stir in flour all at once and cook until bubbly. Stir in mixed herbs and Worcestershire sauce. Gradually stir in chicken stock, wine and cream.
  2. Prepare gravy according to packet directions and stir into soup. Thin with milk if necessary. Simmer 10 minutes stirring occasionally.
  3. Stir in crabmeat and season with hot sauce, salt and pepper. Simmer 2 minutes or until heated through.
