No-freeze instant berry ice-cream

    This recipe is made with frozen fruit from the supermarket, takes about 30 seconds to prepare and is a really healthy ice-cream substitute. The proportions of each ingredient can be adjusted according to how thick you like your ice-cream, and milk can be added to turn this into a frozen smoothie.

    • 125ml natural yoghurt
    • 100g mixed frozen berries

    Preparation:1min  ›  Extra time:1min  ›  Ready in:2min 

    1. Do not defrost the fruit. Put the two ingredients in a blender and whizz for 30 seconds. You'll have an instant ready-to-serve soft-scoop ice-cream.

    We used the yogurt we had (Greek Vanilla) and frozen "berry medley" which was strawberries, raspberries, blackberries & blueberries, blended with a touch of honey for added sweetness and a bit of whole milk to make it smoother. Great for last minute dessert (especially in the summer) and the kids loved it.  -  31 May 2013

    While simple as this is, it must be known, use sweet frozen berries. Or you will find that you recipe will be bitter or tart. I found my raspberries I used were very very tart, so I had to add a few TSPs of sugar to balance it out. The next thing is, you need longer then 30 seconds to combine the 2 ingredients more and the recipe does need a slight freeze on the recipe about 2 hours. But for a quick fix sorbet, this is a decent recipe. Just make sure you taste and adjust sweetness.  -  26 Feb 2015  (Review from Allrecipes UK & Ireland)
