Quick and Easy Shortbread

    This is an easy shortbread recipe that uses fructose. Fructose is found naturally in fruits and vegetables, their juices and honey, or it is processed from cornstarch.

    Serves: 24 

    • 455g butter
    • 1 cup (200g) fructose sugar (Fruisana brand)
    • 1 cup (160g) white rice flour
    • 3 cups (375g) plain flour

    Preparation:15min  ›  Cook:35min  ›  Extra time:30min cooling  ›  Ready in:1hour20min 

    1. Preheat oven to 180 degrees C.
    2. Cream together butter and fructose sugar. Mix in rice flour until well blended. Combine plain flour. Remove from bowl.
    3. Knead dough for 5 minutes. Roll dough out and place in a greased and floured 23 x 33cm dish.
    4. Prick the top with a fork. Bake 35 minutes or until golden brown and a knife inserted in the middle comes out clean. Cut into bars and allow to cool in the pan.

    A friend gave me this recipe and I love it. I roll out the dough and use cookie cutters. I do cut recipe in half as it does produce alot of cookies  -  19 Nov 2007  (Review from Allrecipes USA and Canada)
