Italian Sausage Stew

If you are looking for a hearty stew this is it! Italian sausage, zucchini, mushrooms and tinned tomatoes all combine to create this beautiful stew.

Serves: 6 

  • 500g mild Italian sausage, cut into 2cm pieces
  • 1 cup diced onion
  • 1 tablespoon crushed garlic
  • 4 squash, thinly sliced
  • 2 zucchini, thinly sliced
  • 2 carrots, thinly sliced
  • 2 cups sliced fresh mushrooms
  • 1 tablespoon Italian mixed herbs
  • 2 (400g) tins stewed tomatoes
  • 2 tablespoons grated Parmesan cheese

  1. Cook the sausage with onion and garlic in a large, deep frypan or saucepan over medium heat until the meat is browned; 10 to 15 minutes, stirring frequently.
  2. Mix in the squash, zucchini, carrots, mushrooms, mixed herbs and stewed tomatoes. Reduce heat to medium-low and bring the mixture to a simmer.
  3. Cook stirring occasionally until the vegetables are tender; about 20 minutes.
  4. Sprinkle with Parmesan cheese and serve.
