Cod and Spinach Bake

Spinach combined with cheese and breadcrumbs is the base on which the cod is baked. Serve hot with mashed potato and vegetables.


Serves: 4 

  • 300g frozen diced spinach, thawed and squeezed dry
  • 1 cup sharp cheddar cheese
  • 1/3 cup dry breadcrumbs
  • 1 egg, whisked
  • 500g cod fillets
  • 1 pinch salt and pepper, to taste

  1. Preheat oven to 180 degrees C.
  2. In a bowl, mix the spinach, 1/2 the cheddar cheese, about 5 tablespoons dry breadcrumbs and the egg. Spread the mixture into the bottom of a small baking dish.
  3. Arrange the cod fillets on top of the spinach mixture and season with salt and pepper. Top with the remaining cheddar cheese and breadcrumbs.
  4. Cover and bake 20 minutes in the preheated oven or until fish flakes easily with a fork.
