Classic Greek Salad

    A true Greek salad does not contain any lettuce. This version doesn't have any oil either, a little red wine vinegar accentuates the vegetables and feta.

    Serves: 12 

    • 5 Lebanese cucumbers, sliced
    • 5 large vine ripened tomatoes, coarsely chopped
    • 1/2 red onion, chopped
    • 125g feta cheese, crumbled
    • 60g pitted green olives, chopped
    • 3 tablespoons red wine vinegar

    1. In a large bowl, toss together cucumbers, tomatoes, red onion, feta cheese and green olives. Sprinkle with red wine vinegar. Refrigerate until serving.
