    This is a beautiful and easy yet tasty pasta sauce that gets rich flavours from the red wine and a slight kick from the chilli flakes.

    Serves: 6 

    • 1 teaspoon olive oil
    • 1 cup diced onion
    • 4 cloves garlic, crushed
    • 90ml cup red wine
    • 1 tablespoon white sugar
    • 1 tablespoon diced fresh basil
    • 1 teaspoon chilli flakes
    • 2 tablespoons tomato paste
    • 1 tablespoon lemon juice
    • 1/2 teaspoon Italian mixed herbs
    • 1/4 teaspoon ground black pepper
    • 2 (400g) tins peeled and diced tomatoes
    • 2 tablespoons diced fresh parsley

    1. Heat oil in a large frypan or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
    2. Stir in wine, sugar, basil, chilli flakes, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium and simmer uncovered about 15 minutes.
    3. Stir in parsley. Ladle over the hot cooked pasta of your choice.
