Apricot and Coconut Bars

    Perfect for afternoon teas and lunch boxes these are easy to make apricot and coconut bars that also include walnuts.

    Ingredients
    Serves: 24 

    • 125g butter, softened
    • 1/4 cup (60g) white sugar
    • 1 cup (125g) plain flour
    • 2/3 cup dried apricots
    • 1 cup (250ml) water
    • 2 eggs
    • 1 cup (155g) light brown sugar
    • 1/3 cup (50g) plain flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla essence
    • 1 teaspoon lemon juice
    • 1 cup chopped walnuts
    • 3/4 cup desiccated coconut
    • 1/3 cup (60g) icing sugar, for decoration

    Directions

    1. Preheat the oven to 165 degrees C.
    2. In a medium bowl mix together butter, sugar and 1 cup flour. Press into the bottom of an ungreased 23x33cm cake tin.
    3. Bake for 25 minutes in preheated oven.
    4. In small saucepan bring apricots and water to a boil and cook for 10 minutes. Drain, dice and set aside to cool.
    5. In a medium bowl beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla and lemon juice. Fold in nuts and diced apricots. Stir in coconut. Pour over the prepared crust.
    6. Bake for an additional 20 minutes in the preheated oven or until firm. Cool and dust with icing sugar before cutting into squares.

    I made these for Christmas, along with several other cookies. THESE were gone first! I had to leave out the nuts and thought it would look more festive with the coconut sprinkled on top.
