Greek Cucumber Pasta Salad

    Penne pasta is tossed with tomatoes, cucumbers, green capsicum and black olives, then dressed in a lemon juice vinaigrette.

    Serves: 8 

    • 500g packet penne pasta
    • 3 tablespoons olive oil
    • 1 teaspoon lemon juice
    • 1 teaspoon dried basil
    • 1 teaspoon ground black pepper
    • 2 tomatoes, chopped
    • 1 green capsicum, chopped
    • 1 red onion, chopped
    • 1 cucumber, coarsely chopped
    • handful black olives, pitted and chopped

    Preparation:15min  ›  Cook:15min  ›  Extra time:30min chilling  ›  Ready in:1hour 

    1. Cook pasta in a large saucepan of boiling water for 10-12 minutes or until 'al dente'. Drain, and rinse in cold water.
    2. In a small bowl, mix together oil, lemon juice, basil and black pepper.
    3. In a large bowl, combine pasta, tomatoes, green capsicum, onion, cucumber and black olives. Add dressing, and toss to coat. Chill in the refrigerator for 30 minutes.

    Did this for Christmas Day. Wifey was going to buy one but who likes shopping on Christmas Eve, so we threw this together at the last minute and it was excellent. We'll definitely be making this again when the occasion calls for it.  -  29 Jan 2010


    I love this recipe...although I've made a few slight changes to it. I use spiral pasta (tri-colored if available) and add 8 oz. feta cheese. It's best to get the block kind of feta and break it up into big chunks b/c when you mix the whole salad, it'll break up the feta. Already crumbled feta breaks down too much. Also, try olive oil instead of veggie oil and 1 tablespoon red wine vinegar instead of lemon juice or half the lemon juice and a little red wine vinegar.
