    This is a relatively healthy oat based homemade snack that is packed with dates and apricots.

    Ingredients
    Serves: 24 

    • Filling
    • 1 cup dates, pitted and diced
    • 1 3/4 cups drained stewed apricots
    • 1/2 cup (125g) white sugar
    • 2 tablespoons apricot nectar
    • Crust
    • 3/4 cup butter, melted
    • 1 cup (155g) brown sugar
    • 2 cups (250g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 2 cups oats
    • 1 teaspoon vanilla essence

    Directions

    1. Filling: Cook together the dates, drained cooked apricots, white sugar and apricot nectar. Cook for about 3 minutes or until it resembles jam.
    2. Crust: Mix together melted butter, brown sugar, flour, bicarbonate of soda, oats and vanilla.
    3. Assembly: Press half of the crust mixture on the bottom of a well greased 23x33cm cake tin. Cover with filling. Top with rest of crumbs. Press down gently.
    4. Bake for 30 minutes at 180 degrees C.
    5. Cool in the tin then slice into bars.
