    Apple Sauce and Egg Noodle Kugel

    This sweet kugel uses egg noodles and is is flavoured with vanilla and apple sauce. It is baked over a layer of sweet biscuit crumbs.

    Serves: 12 

    • 450g wide egg noodles
    • 230g light margarine
    • 1/2 cup (115g) light sour cream
    • 1 1/2 cups (350ml) egg substitute
    • 2 cups (400g) white sugar
    • 1 teaspoon lemon juice
    • 1 teaspoon vanilla essence
    • 200ml apple sauce
    • 1/4 cup sultanas
    • 1/4 cup plain sweet biscuit crumbs
    • 1 teaspoon ground cinnamon, to taste

    1. Preheat oven to 180 degrees C. Grease a 20x30cm baking dish.
    2. Bring a large pot of lightly salted water to a boil. Cook noodles in boiling water for 8 to 10 minutes or until al dente. Drain.
    3. In a large bowl mix together margarine, sour cream, egg substitute, sugar, lemon juice, vanilla essence and apple sauce. Stir in noodles and sultanas.
    4. Spread biscuit crumbs on the bottom of the prepared dish. Pour the noodle mixture over the crumbs. Sprinkle top with cinnamon.
    5. Bake 45 to 60 minutes in the preheated oven or until set. Cover with foil during the cooking process if it browns too quickly.

    Egg Substitute

    There is a product called No Egg(TM) that I like to use.
