Mini Apple Tarts
These are a cross between a muffin and an apple pie. An oat base is filled with spiced and sweetened stewed apples.
Ingredients
Serves: 48
- 3 large apples, peeled, cored and diced
- 1/4 cup (65ml) water
- 1 tablespoon white sugar
- 1/2 teaspoon ground cinnamon, or to taste
- 2 cups (250g) plain flour
- 2 cups (300g) oats
- 1 cup (150g) brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 375g butter

- Preheat oven to 180 degrees C. Grease 4 (12 cup) mini cupcake or muffin trays.
- Mix apples, water, white sugar and cinnamon together in a saucepan and bring to a simmer over medium-low heat stirring occasionally. Simmer until apples are partially cooked; about 5 minutes; remove from heat.
- Combine flour, oats, brown sugar, cinnamon and nutmeg in a large bowl. Rub the butter into the flour mixture until the mixture looks like coarse breadcrumbs.
- Place a heaped tablespoon of the base mixture into a mini cupcake cup and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the base go all the way to the top of the little cupcake cup and patch any holes with more mixture. There will be mixture left over.
- Place about 2 teaspoons of apple filling in the shell. Sprinkle about 1 teaspoon of the remaining base mixture on the filling.
- Bake in the preheated oven until golden brown; 15 to 20 minutes.

I had to alter the amount of butter in this recipe (I halved all amounts to make 24 and used around 150g butter) but these turned out great - very cute - 05 Jan 2013
I and my family and friends loved this delicious mini Apple cake. I made an original patty pan sized version. As I didn't want so many tiny ones. And that size was easier for me to handle. Will be making it again today. I will be adding rhubarb from the garden, as there is so much of it to be used. Thank you Weeble great recipe. - 23 May 2016
hello. i'm the submitter of this recipe. i forgot to add an important side note to this recipe. if i have apple juice on hand, i'll use it in place of the water. i find that it adds another layer of flavour and sweetness to the apples. - 09 Oct 2010 (Review from Allrecipes USA and Canada)
