I love this cake as a dessert with ice cream or vanilla yoghurt but also enjoy the leftovers as a normal cake the next day.


Serves: 18 

  • Topping
  • 1 cup (155g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped pecans
  • Cake
  • 2 cups (250g) plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1 cup (250g) sour cream
  • 125g butter, softened
  • 1 cup (220g) white sugar
  • 2 eggs, whisked
  • 3/4 cup apple butter, or concentrated stewed apples
  • 1 teaspoon vanilla essence
  • 1/2 cup whole bran cereal or wheat germ

  1. Preheat oven to 180 degrees C. Spray or grease one 23x33cm cake tin.
  2. Topping: Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg and pecans.
  3. Cake: Sift together the flour, baking powder, bicarbonate of soda and salt.
  4. Add sifted dry ingredients alternately with sour cream; mix well after each addition.
  5. Blend together butter and sugar then add eggs and beat well. Add apple butter, vanilla and bran.
  6. To Assemble: Pour 1/2 batter into the prepared tin then sprinkle 1/2 the topping over top. Pour remaining batter and top with remaining topping.
  7. Bake for 40 minutes.
