    Biscotti are twice-baked in the oven to create a dry and crunchy biscuit. This recipe gives you the option of spicing them up with star anise and walnuts.

    Ingredients
    Makes: 60 biscuits

    • 8 cups (1kg) plain flour
    • 7 teaspoons baking powder
    • 225g butter
    • 2 1/2 cups (500g) white sugar
    • 2 teaspoons vanilla essence
    • 8 eggs
    • 2 teaspoons anise essence (optional)
    • 3 teaspoons ground star anise (optional)
    • 1 cup chopped walnuts (optional)
    • 2 egg yolks, lightly beaten

    Directions
    Preparation:10min  ›  Cook:25min  ›  Extra time:30min cooling  ›  Ready in:1hour5min 

    1. Preheat oven to 180 degrees C.
    2. In a large bowl sift together the flour and baking powder then set aside.
    3. In another large bowl cream together butter and sugar. Gradually add the vanilla and eggs while mixing. Stir in the flour mixture and mix until dough forms.
    4. For plain biscotti do not add anything else. For star anise biscotti add the ground star anise. Add walnuts if desired.
    5. Roll dough out into 4 logs approximately 20cm long, 2cm in height and 7cm wide. Place logs on baking trays 5cm apart. Brush with egg yolks and bake for 15 minutes until golden brown.
    6. Slice on a diagonal slant; slices should be about 1cm wide. Lay slices back onto baking trays and return to the oven for 10 more minutes. Remove when the biscuits are dry and lightly toasted. Cool completely on cake racks.

    This cookie recipe is FANTASTIC!! Very easy to make (my 9yr.old helped me). On my very first try they turned out perfect.(I omitted the walnuts,preferring only the anise). My Husband is impressed, my Parents were stunned and they were a hit at the dinner party I attended. I am Italian and I come from a family of Bakery owners and these cookies impressed them. Thank-you for submitting this recipe and I always make mention as to where and whom this recipe originated from. I highly recommend this recipe for its simplicity and its deliciousness!!
