Chocolate Coated Honeycomb

This is a do-it-yourself sweet treat. Honeycomb is made then broken into small serving pieces and coated in dark chocolate.


Serves: 30 

  • 1 cup (220g) white sugar
  • 1 cup (250ml) golden syrup
  • 1 tablespoon vinegar
  • 1 tablespoon bicarb soda
  • 500g dark cooking chocolate

  1. Butter a 20x30cm baking dish.
  2. In a medium saucepan over medium heat combine sugar, golden syrup and vinegar. Cook, stirring until sugar dissolves.
  3. Heat without stirring to 150 to 155 degrees C or until a small amount of syrup dropped into cold water forms hard, brittle threads.
  4. Remove from heat and stir in bicarb soda. Pour into prepared baking dish; do not spread. Mixture will not fill the dish. Allow to cool completely.
  5. In the microwave or over a double boiler, melt dark chocolate stirring frequently until smooth.
  6. Break the cooled honeycomb into bite sized pieces then dip into melted chocolate. Let set on baking paper. Store tightly covered.
