    A simple almond slice that can be made quickly and easily. Biscuits and almonds are placed in a shallow tray then topped with a brown sugar, butter and vanilla caramel.

    Serves: 48 

    • 12 sweet plain biscuits
    • 1 cup sliced almonds
    • 3/4 cup butter
    • 1 cup (155g) brown sugar
    • 1 teaspoon vanilla essence

    1. Preheat oven to 180 degrees C. Grease a 25x30cm jelly roll tin or baking tray pan.
    2. Break biscuits into 4 pieces and arrange them touching on the prepared jelly roll tin. Sprinkle the sliced almonds over the crackers.
    3. In a small saucepan melt butter. When butter is melted stir in the brown sugar and vanilla until smooth then remove from heat.
    4. Pour the butter mixture evenly over the biscuit and almond layer in the jelly roll tin.
    5. Bake for 8 to 10 minutes in the preheated oven. Watch carefully so that the edges do not burn.
    6. Cut bars while still warm and remove from tin. If the bars are stuck put the tin into the warm oven for a minute to loosen.
