All Purpose Tomato Sauce

    A bulk batch of this all purpose tomato sauce can go a long way, we like it on our pasta, as the base for a parmigiana and even used it on pizzas.

    Ingredients
    Serves: 48 

    • 1/4 cup (60ml) olive oil
    • 1 bulb garlic, cloves separated, peeled and sliced
    • 4 (800g) tins whole tomatoes, diced
    • 2 (800g) tins diced tomatoes
    • 4 (125g) tins diced green chillies
    • 1 (170g) tin tomato paste
    • 1/2 cup capers
    • 1 cup pitted green olives, diced
    • 1 cup diced fresh parsley
    • 2 cups portobello mushroom caps, cut into 1/2 cm pieces
    • 2 tablespoons prepared horseradish
    • 1 teaspoon chilli sauce
    • 1 tablespoon white sugar
    • 1 teaspoon Italian mix herbs
    • 1 teaspoon dried oregano
    • 1 teaspoon cumin

    Directions
    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Heat the olive oil in a large saucepan over medium heat and cook the garlic until lightly browned.
    2. Drain excess oil. Mix in the whole tomatoes, diced tomatoes, green chillies, tomato paste, capers, green olives, parsley, portobello mushrooms, horseradish, chilli sauce and sugar.
    3. Season with Italian mixed herbs, oregano and cumin.
    4. Cover and bring to a boil. Reduce heat to low and simmer 25 minutes.

    I didn't add the mushrooms and may leave out the cumin next time but a good basic sauce.  -  11 Dec 2013

    This is a very chunky sauce. After adding the chopped green chiles and smelling the pot, I was a little wary, but it turned out great. I had it on homemade pizza, and when I was spreading it on the crust, again, I was a little wary about it being too chunky, but, again, it was great. I let it simmer longer than called for, and I think that helped break down the whole tomates. It has a great flavor and will be much better served plain on pasta than a regular sauce would be.  -  21 Jan 2006  (Review from Allrecipes USA and Canada)
