    Vegetarian simplicity at its best with this quick and easy to make mushroom pizza. You can gourmet it up with a variety of exotic mushrooms.

    Ingredients
    Serves: 8 

    • 1 pre-baked pizza base
    • 3 tablespoons olive oil
    • 1 teaspoon sesame oil
    • 1 cup fresh spinach, rinsed and dried
    • 250g grated mozzarella cheese
    • 1 cup sliced fresh mushrooms

    Directions
    Preparation:13min  ›  Cook:12min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C. Place pizza base on baking tray.
    2. In a small bowl mix together olive oil and sesame oil. Brush onto pre-baked pizza base, covering entire surface.
    3. Stack the spinach leaves then cut lengthwise into 1cm strips; scatter evenly over crust.
    4. Cover pizza with grated mozzarella then top with sliced mushrooms.
    5. Bake in preheated oven for 8 to 10 minutes or until cheese is melted and edges are crisp.

    Excellent pizza!! We eat it at least once a week sometimes twice. I will occasionally grate some feta on top of the mozzarella however, the original recipe needs no improvement. Thanks!!  -  01 Jan 2002  (Review from Allrecipes USA and Canada)

    Last night I made something similar-made my own crust,adding fennel seed and garlic pepper to the dough. Baked it 6 minutes at 475. For the topping I mixed spinach, mushrooms, diced tomatoes, green peppers, onions, garlc, pesto and diced chicken. Then added grated provolone, mozzerella, pepperjack anf feta cheese.
