Barbecued Salmon

Whether I have caught it myself or got it from the fish markets this is one of my favourite recipes to cook salmon.

Serves: 16 

  • 1 cup (220g) brown sugar
  • 1/2 cup (125ml) honey
  • 1 dash liquid smoke, optional
  • 1/2 cup (125ml) apple cider vinegar
  • 1 (2kg) whole salmon fillet

Preparation:10min  ›  Cook:17min  ›  Ready in:27min 

  1. Preheat a barbecue for high heat.
  2. In a small bowl mix together brown sugar, honey and vinegar. Brush one side of the salmon with the basting sauce. Place the salmon on the barbecue basted side down.
  3. After about 7 minutes generously baste the top and turn over. Cook for about 8 more minutes then brush on more basting sauce; turn and cook for 2 minutes.
  4. Take care not to overcook the salmon as it will loose its juices and flavour if cooked too long.
