Quick and Easy Chocolate Chip Cookies

    Serves: 24 

    • 225g butter
    • 3/4 cup (150g) white sugar
    • 3/4 cup (110g) brown sugar
    • 2 eggs
    • 2 teaspoons vanilla essence
    • 2 1/4 cups (280g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 2 cups (335g) milk chocolate chips

    Preparation:10min  ›  Cook:10min  ›  Extra time:20min cooling  ›  Ready in:40min 

    1. Preheat oven to 180 degrees C. Grease 2 baking trays.
    2. In a large bowl, cream the butter, white sugar and brown sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla.
    3. In a medium bowl, combine the flour, bicarbonate of soda and salt; gradually stir into the creamed mixture. Fold in the chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking trays.
    4. Bake for 8 to 10 minutes, until light brown. Allow biscuits to cool on baking tray for 5 minutes before removing to a cake rack to cool completely.

    My husband absolutely loved these. Looks like they may become a regular baking project I half the dough mixture and did half choc chip, half white choc and macadamia... Yum!  -  26 Feb 2015


    This recipe is the best choc chip cookie recipe that ive seen yet. We have 5 kids, and they demolished them in about 2 days, even digging past the jam bikkies to get to them. 5 stars for sure. Ive also made them with 2 cups of coconut added and they are delish too!  -  12 Feb 2015


    I added a bit of peanut butter and it turned out really yummy This is a great recipe. I sent my younger brother down to the shops to get milk chocolate chips, and he came back with these dark chocolate melts, but they still worked fine.  -  24 Nov 2012
