Cucumber Summer Salad

    A simple summer salad of cucumber and onion marinated in red wine vinegar, mirin, sugar, ginger and lime juice.

    Serves: 4 

    • 2 tablespoons (40ml) red wine vinegar
    • 4 tablespoons (80ml) mirin
    • 2 tablespoons brown sugar
    • 3 teaspoons grated fresh root ginger
    • 2 tablespoons fresh lime juice
    • 1 large cucumber, thinly sliced
    • 1/2 small onion, thinly sliced

    Preparation:45min  ›  Extra time:30min chilling  ›  Ready in:1hour15min 

    1. In a serving bowl, stir together the red wine vinegar, mirin, brown sugar, ginger and lime juice. Add the cucumber and onion and toss gently to coat. Chill for 30 minutes to blend flavours before serving.

    Although I liked this, I thought the ginger was over-powering. Next time I'll cut back on it. Also, you are going to want to use very fresh, crisp cukes. I used one that was past it's prime & I didn't care for the texture of it. So I made it again using a very crisp one....much better! Thansk Christine...we enjoyed this but next time, will cut back on the ginger.  -  29 Sep 2008


    Good taste, texture and appearance. Made a nice accompaniment to a Japanese meal. I didn't have mirin, so a used a regular sweet wine, and red onions to add a bit of colour. I am NOT normally a fan of cucumbers, but I will definitely make this again.  -  29 Sep 2008


    Great! Light and yet not too sweet. I paired this with the Chutney chicken receipe and the Cajun Chicken to balance the spice. THe only think I did add was minced chives as I wanted more colour.  -  29 Sep 2008
