These delicious latkes have zucchini, spinach, potato, sweet potato, carrot and onion. They are mixed with matzo meal, so they are a great choice for Passover too.
Squeeze all excess water out of the vegetables. Rinse then squeeze again. Place in a bowl then add in eggs, salt, pepper, matzo meal, parsley and feta then mix until well combined.
In a large frying pan, heat oil over medium high. Form the veggies into pancakes then fry in the hot oil until golden brown, about 5 minutes per side.
Drain on news paper then serve with sour cream or apple sauce.
