I don't know what I like best the the chocolate chips or the bursts of raspberries in this easy to follow recipe. Sometimes I exchange for whatever fruit is in the house.

Serves: 8 

  • 1 1/4 cups (155g) plain flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 75g butter
  • 2/3 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/2 cup (125ml) milk
  • 1 1/2 cups frozen raspberries
  • 1/2 cup chocolate chips

Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

  1. Preheat oven to 180 degrees C. Grease and flour a 24cm square cake tin.
  2. Sift together the flour, baking powder and salt. Set aside.
  3. With an electric mixer in a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg then stir in the vanilla.
  4. Beat in the flour mixture alternately with the milk. When the batter is well combined gently stir in the raspberries and chocolate chips. Pour batter into prepared cake tin.
  5. Bake in the preheated oven for 40 to 50 minutes or until centre spings back when lightly touched. Allow to cool.
