Josh's Fresh Coconut Cake

    A creamy, nutty coconut cake which uses coconut milk and grated fresh coconut. You could use shredded coconut but it really is worth getting the fresh and grating it.

    Makes: 1 cake

    • 3/4 cup sugar
    • 50g butter
    • 1 egg
    • 1 egg yolk
    • 1/2 cup coconut milk
    • 1/2 cup plain flour
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 2 cups grated fresh coconut

    1. Pre-heat the oven to 175C. Grease a cake tin.
    2. Cream the butter and sugar, add the whole egg, and just the yolk of another egg and beat to combine. Stir in coconut milk, and sift in the flour and spices. Lastly, stir in the grated coconut.
    3. Pour into the cake tin, bake in oven for 25-30 minutes or until nicely golden on top.
