Beer and Coconut Fried Prawns

    It is my personal goal to get beer in as many recipes as I can. Here it's in the batter of the fried prawns. Tastes great and can look pretty fancy too. I used it as an entree to rave reviews.

    Serves: 2 

    • 12 medium sized prawns
    • 3/4 cup instant plain pancake mix
    • 1/2 a beer
    • 1/4 cup desiccated coconut
    • 1/2 cup vegetable oil

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Rinse the prawns then shell and de-vein if required.
    2. Dust the prawns in the dry pancake mix.
    3. Mix the remaining pancake mix with the beer until you get a batter consistency you like. Feel free to drink remaining beer :)
    4. Dip the prawns in the batter then in the coconut.
    5. Heat a frypan with about a centimetre layer of oil at a medium heat.
    6. Cook the prawns both sides until the batter and coconut is a rich brown. If the oil is too hot they will burn and be raw on the inside, too cold and the batter is soggy and oily.
    7. Serve hot with your favourite sauce, I find sweet chilli works well.
