Shaz's Perth Penne

    Use this with almost any pasta, chicken or seafood. Its very versatile. The sauce cooks while the pasta is cooking so this makes a great creamy chicken pasta weeknight dinner.

    Serves: 6 

    • 500 grams pasta any kind (Penne or Rotini)
    • 1 Tablespoon olive oil
    • 1 small bacon slice finely chopped
    • 3 Tablespoons chopped fresh or frozen onion
    • 1 teaspoon crushed garlic
    • 250 grams boneless chicken breast or thigh, cut into bite sized pieces
    • 1 small chopped tomato
    • 5 chopped button mushrooms
    • 2 Tablespoons dried parsley
    • 2 teaspoons dried tarragon
    • 1/2 teaspoon salt
    • 250 ml cream (adjust qty for your favourite consistency)
    • 1/2 cup grated parmesan cheese

    1. Get a large pot of water on the boil. Add pasta and begin cooking.
    2. Heat a large fry pan and add olive oil, bacon and onion. Fry until the bacon is almost crispy and the onions are clear and semi soft. Add the garlic. Fry and stir for 1 minute more.
    3. Add the bitesized pieces of chicken . Cook until mostly done. Add tomato, mushrooms and herbs and salt. Cook until mushrooms are semi soft.
    4. Pour in the cream and turn the heat down. You can cover the pan at this point to bring it back to just before the boil. Simmer until it thickens a little, stirring occasionally. Taste and add more herbs or salt if you like.
    5. Drain the cooked pasta and put it in a large bowl. Toss it with the parmesan before it cools too much. Then add the creamy chicken mixture and toss well. Sprinkle with more parmesan or chopped tomatoes for garnish.
