Stovetop Rice Pudding

    Rice pudding is always a good use for leftover rice! This rice pudding comes out very creamy and is flavoured with sultanas and cinnamon.

    Serves: 8 

    • 3 cups cooked rice
    • 4 cups milk
    • 2/3 cup sugar
    • 1/2 cup sultanas
    • 1/2 teaspoon salt
    • 2 tablespoons butter
    • 1 egg, beaten
    • 1 teaspoon vanilla extract
    • dash nutmeg or cinnamon (optional)

    1. Combine rice and 2 cups milk, sugar and salt in a heavy saucepan. Cook over medium heat and stir occasionally until thick and creamy, 15-20 minutes. Blend remaining milk and egg (make sure egg is beaten well) and stir into rice mixture. Add sultanas and cook two minutes longer, stirring occasionally. Add butter and vanilla. Spoon into serving dishes and sprinkle with nutmeg and/or cinnamon.
